Holiday Cookie Sandwiches with Vanilla Bean Frosting

Sometimes you don’t have a lot of time to make a beautiful dessert. This recipe can be completed in under 30 minutes and looks like you spent all day on them! Start by preheating your oven, make your frosting, cool the cookies then assemble away! If you are not a big icing fan stuff these cookie sandwiches with our edible cookie dough or with peppermint ice cream (Jeni’s is our favorite). Holiday Cookie Sandwiches with Vanilla Bean Frosting

Makes: 9 sandwiches

Preheat oven to 350F and follow baking instructions on back of the box of The Cookie Dough Cafe chocolate chunk place & bake cookies.

Ingredients

Vanilla Bean Frosting
1/2 cup butter
1/2 cup shortening
4 cups powdered sugar
1 tbsp vanilla bean paste
2 tsp vanilla extract
2-3 tbsp water, milk or cream

In a large bowl, beat the butter and shortening until smooth. Add in 2 cups of powdered sugar and mix. Add in the vanilla bean paste, vanilla extract and 2 tbsp water. Beat until smooth. Finish with the last 2 cups of powdered sugar and mix until combined and smooth. If the frosting is too thick add an additional tbsp of water.
